Beet Burgers


One of the many exciting things we get in our goodie bags during our monthly cooking classes at the NKCS is a vegan cookbook. Our most recent surprise to go along with “The World of Beans” weekend was a book I have never heard of before called Meatless Burgers by Louise Hagler. I enjoy Hagler’s work, as she wrote one of my favorite cookbooks, The Tofu Cookery. I was pleased to receive the Meatless Burgers book and was blown away by all of the creative veggie burger recipes. Since I’ve been a big fan of almost every beet-based burger I’ve had to date, I decided to try the beet burgers. In addition to the beets, some of the other main ingredients included tofu and vital wheat gluten. I fell short of the amount of tofu that the recipe called for, which I think caused the burgers to be softer than they probably should have been. Despite this, the color and flavor of the burgers were great. I enjoyed my burger with some Chipotle Vegenaise and dill hamburger slices. The burgers were even delicious on their own, sans hamburger buns.

Overall, I’d rate this burger as 3 out of 5 carrots on the veganlicious scale! 3carrots
