Another cupcake testing, another success! Here is the latest cupcake creation we tested for Kelly Peloza‘s upcoming dessert cookbook. This cupcake was moist, delicious, and buttery. It had a nice blend of lemon with hints of whiskey. For whiskey aficionados more could have been added, but for me the current level was fine. It was a unique blend of flavors that I’ve never had before but was glad I tried. We’d definitely make these again, especially for a special occasion or for entertaining friends.
I have been meaning to make these cupcakes for a long time and finally got the chance to recently. This is another fabulous creation from Kelly Peloza, who is dedicated to coming up with delicious drink-themed desserts in her latest cookbook.
These cupcakes are rich with coconut-flavored goodness! They were moist with a delicious coconut and cola buttercream frosting. Even my omni friends were raving over these. Once Kelly’s new cookbook comes out, you have to check it out, even if just for this recipe alone. Yummy!
I tried a truly unique recipe over the weekend that will be featured in Kelly Peloza‘s newest cookbook. This interesting concoction is based on the lovely sweet potato and Kelly’s experience having some slammin’ french toast in Portland, Oregon (vegan mecca!). You’ll find it topped with a sweet and creamy coconut cream topping as well. My only regret in making the french toast was allowing the battered slices to cook too long (my oven has a gas-range and heats things quicker than usual, even on low). If I try this again, I’d use a different type of bread to change it up and I’d cook it for a shorter period of time. This does give me inspiration though to try either a pumpkin or winter squash based batter in the future. One of the most delightful things was the sweet potato spiced aroma that lingered in my house for almost a day later! Delicious!
I recently tested some tasty little ice cream sandwiches courtesy of a new cookbook that will be coming out by vegan cookbook author Kelly Peloza. These yummy dessert ice cream cookie sandwiches are great for the root beer lover in anyone. I used Rice Dream Organic Vanilla ice cream as the filling and Kelly’s secret (for now) recipe for the graham-cracker-like cookies. I also used a variety of cookie cutters to make them fun to eat. Even though I’m not a big root beer fan, I enjoyed the Root Beer Float Ice Cream Sandwiches. Some taste testers of mine thought the dough was a little dense. There was too much root beer flavor for one, but not enough for another. Overall though, quite an original idea!
I haven’t made a good brownie recipe in quite some time and Kelly Peloza’s new recipe in her upcoming drink-themed vegan dessert book caught my eye. I’m not a fan of beer, but luckily the beer taste didn’t saturate this yummy brownie. They were easy to make and came out chocolatey, rich, and quite delicious. The only downside is the brownies were gone 20 minutes after my hubs unleashed them unto his coworkers for taste testing today. There are no more left for us (which is probably a good thing, as they could get us in trouble). Excellent recipe. Be sure to make this one when her new cookbook comes out!
